Soils here are clay and limestone, and vines average around 25 years old.\u003c\/p\u003e\u003cp\u003eWhole bunches go directly into cement tanks sealed from oxygen, where intracellular fermentation begins inside the intact berries using only indigenous yeasts. After roughly two weeks of carbonic maceration the grapes are pressed and the wine continues to refine in the same cement vessels. No fining, no filtration, no added sulfites at any stage.\u003c\/p\u003e\u003cp\u003eThe color lands in amber-gold territory, deeper than a conventional white and lighter than a full skin-contact orange. On the nose it reads as honeysuckle, dried apricot, and a faint balsamic lift. The palate is dry, with enough tannic grip from the skin contact to give structure, and an acidity that keeps things focused rather than heavy.
