The grapes are harvested by hand in the cool of the morning, then transported back to Bonastre for vinification.\u003c\/p\u003e\u003cp\u003eThe wine is made by the ancestral method: native yeast fermentation begins and the wine is bottled before it completes, trapping the CO2 produced during secondary fermentation in bottle. It spends a minimum of 10 months on the lees in bottle before disgorgement. No sulfites are added at any stage. The wine is unfined and unfiltered.\u003c\/p\u003e\u003cp\u003eBobal is Spain's third most planted red grape variety, though it remains little known outside its native regions of Cuenca and Valencia. Partida Creus treats it as a focal point of its work recovering historically significant indigenous Catalan and Spanish varieties.
