Auxerrois as a variety delivers soft, round fruit — white peach, pear, and citrus peel — with a naturally low-acid, creamy texture. The result here sits between fresh citrus and orchard fruit, with a lightly yeasty, bready quality from the lees.\u003c\/p\u003e\u003cp\u003eEric Kamm took over the family domaine in 2005 from his father Jean-Louis, converting the 6.5-hectare estate to organic farming and moving toward zero-intervention winemaking. No chemical additives, no temperature control, no fining, no filtration, and no added sulfites at any stage.
