Prugnolo vines are 20 years old; the San Colombano vines are 35-40 years old, both trained to spurred cordon.\u003c\/p\u003e\u003cp\u003eRed and white grapes are co-fermented together for 7-8 days on the skins with no temperature control, using only spontaneous native yeasts. No additives are used at any stage. After fermentation, the wine ages 8 months in stainless steel (inox) tanks, then is bottled unfined, unfiltered, and with no added sulfites.
