The soils are surface clay over schist and broken granite, locally called sasso dolomitico. Vines are trained in the traditional Pergola Trentina system, which promotes airflow and even sun exposure on steep alpine slopes.\u003c\/p\u003e\u003cp\u003eAfter destemming, the grapes are softly pressed using a pneumatic press and left to ferment spontaneously with native yeasts. The must stays in contact with the skins for approximately 25 days before being aged in stainless steel tanks on the lees until bottling in spring. The wine is unfined and unfiltered, with no added sulfur.\u003c\/p\u003e\u003cp\u003eIn the glass it shows a vivid amber-orange with a faint pinkish tinge. The nose opens with white flowers, alpine herbs, and a light yeasty note. On the palate expect tangerine, peach, pink grapefruit, and lemon, with a delicate tannic grip and a clean, mineral finish.
