Vines are trained in the traditional pergola trentina system and farmed biodynamically with no synthetic inputs of any kind.\u003c\/p\u003e\u003cp\u003eIn the cellar, grapes are pressed and ferment spontaneously in stainless steel with no added yeasts, no temperature control, and no sulfur. The wine is then racked into demijohns and left outside in the snow during winter, using the cold to clarify naturally. In spring, frozen must from harvest is added to trigger bottle refermentation.
