The vineyards sit at around 350 meters elevation on clay and limestone soils, farmed biodynamically and certified Demeter since 2011. The blend is Malbec (Côt), Merlot, and Tannat — the same grapes permitted in Cahors AOC reds — declassified to Vin de France because the appellation does not permit rosé.\u003c\/p\u003e\u003cp\u003eWinemaking uses both direct pressing of destemmed and whole-cluster grapes and the saignée method, followed by a medium-length skin maceration. Fermentation is spontaneous with native yeasts. The wine ages on the lees for six months in concrete vats and barrels, with no fining, no filtration, and minimal to no added sulfur.\u003c\/p\u003e\u003cp\u003eThe result is a darker, more structured rosé than most — vivid red fruit, wild herb notes, and a vibrant acidic finish that comes from the altitude and the limestone soils.
