The 2021 vintage is a blend of Semillon and Chenin Blanc, with vines on some sites dating back to the 1940s and farmed by viticulturalist Fiona Wood under NASAA-certified organic practices.\u003c\/p\u003e\u003cp\u003eIn the cellar, the Semillon is fermented whole cluster while the Chenin Blanc is fermented on its skins in neutral barrel. Nothing is added or removed: no sulfur, no fining agents, no filtration. The wine is sealed under crown cap.\u003c\/p\u003e\u003cp\u003eThe result sits on the lighter end of the orange wine spectrum. At around 10.5% ABV, it is low-alcohol and very dry, with tropical fruit character, citrus brightness, and the gentle grip you get from the Chenin skin contact. The texture is present but not dominant.\u003c\/p\u003e\u003cp\u003eJauma produces all wines without additions of any kind, a practice James Erskine has maintained since 2015.
