Winemaker Tamuna Bidzinashvili planted the varieties as a living library of Georgian viticultural heritage, with the blend including Rkatsiteli, Kakhuri Mtsvane, Kisi, Saperavi, Khikhvi, and dozens of rarer heirloom varieties.\u003c\/p\u003e\u003cp\u003eThe grapes are harvested together, pressed, and fermented with native yeasts in traditional Georgian qvevri — egg-shaped clay vessels buried in the cellar floor. The wine ages for 12 months in qvevri, then is bottled unfined and unfiltered with minimal sulfite addition (35 mg\/L). No chemical additives are used at any stage. All vineyard work is organic.\u003c\/p\u003e\u003cp\u003eThe result is a deeply colored rose that behaves more like a light red: red and black fruit aromatics, earthy spice, and integrated tannin from the qvevri contact. The low natural alcohol (around 10.5-11%) keeps it fresh and drinkable without sacrificing structure or complexity.
