The grapes were macerated as whole bunches for a week before being pressed.   Aging takes place half in 10-year-old 228L Burgundy barrels, a quarter in truncated conical wooden vats, and a quarter in sandstone amphorae for nine months. The grapes come from plots of schist, sandstone, clay and sedimentary soils, and the wine is mostly négoce grapes with just a little of Yannick's own Pinot, resulting in a sun-influenced wine that is rich in tannins.   Grapes are hand-harvested and vinified separately, each with one-week whole-bunch maceration in open-top vats prior to pressing to neutral Burgundy barrel, then blended, rested for a short time and bottled unfined, unfiltered, with no additional SO2.
