The Albariño came in mid-August. It was foot tread, then wrapped and flushed with CO2. It was pressed two days later and went dry six days after pressing. In order to add some acidity and complexity, direct press French Colombard was added. It was then bottled, and fermentation finished in the bottle, causing it to be sparkling. The bottles were left upright for six months in order to allow more lees contact prior to riddling.
