It was Montalcino's first certified organic estate in 1996, and since 2022 the Eichbauers have been working biodynamically according to Demeter guidelines.   Teatro is the smallest cru of the estate and also its highest, 0.7 hectares at 500 to 520 meters, an amphitheatre facing south, with the oldest vines, planted in 1994. The Piaggione bottling is 100% Sangiovese drawn from a  1.2-hectare cru at 420 to 450 metres altitude with skeletal limestone soils, planted in 1994 and 2007 .
