Vines range from 40 to 80 years old, cultivated using traditional gobelet pruning on sandy loam soils with granite subsoil. Grapes are hand-harvested and sorted in the cellar before undergoing carbonic or semi-carbonic maceration in concrete tanks. Fermentation occurs with indigenous yeasts, without added chemicals or chaptalization. Following pressing, the wine ages in large Austrian foudres, preserving fruit purity while adding subtle refinement. Named after Maurice, the previous property owner who lived on the estate his entire life, this cuvée honors the property's heritage.
