At the start none had viticultural training: Antonello was a film director, Dino a historian, Emilio a lawyer. Their first vineyard was a single hectare of the white grape Mantonico bought from an old farmer who found the land too hard to work. Magliocco Tondo is a smaller-berried, more drought-resistant sub-variety of Magliocco Dolce, one of Calabria's most ancient indigenous red grapes. At the elevation and northern exposure of the Monte Pollino foothills, the fruit retains freshness and acidity that distinguishes it from riper, lower-altitude Calabrian reds.\u003c\/p\u003e\u003cp\u003eThe wine is labeled IGP Calabria and is produced in small quantities. Vines are spur-trained on sandy soils over sandstone (arenaria) bedrock with iron-rich clay subsoil, exposed to the north, which keeps temperatures cooler than most of Calabria and preserves natural acidity.\u003c\/p\u003e\u003cp\u003eThe grapes are hand-harvested, direct-pressed, and fermented spontaneously with indigenous yeasts in stainless steel. The wine ages on the lees in stainless steel for 12 months before bottling.
