This thermal drop during late-summer ripening helps Pinot Noir retain sharp natural acidity and produce small, concentrated berries.\u003c\/p\u003e\u003cp\u003eThe wine is unfined, unfiltered, and made with no added sulfur dioxide. Production is extremely small. Expect a pale salmon color, lively fine bubbles, and flavors leaning toward wild strawberry, red cherry, white pepper, and a faint floral lift.
