Since 2005, he has been transitioning the vineyards to biodynamics. Today, all parcels are either fully organically farmed or in organic conversion. No synthetic chemicals are used. The Lantignié parcels — approximately eight to ten hectares — are planted to Gamay in Muscovite granite and blue clay soils with sandstone subsoil, with vine age ranging from 35 to 50 years and a planting density of 10,000 vines per hectare.\u003c\/p\u003e\u003cp\u003eIn the cellar, Jean-Paul uses spontaneous fermentation with indigenous yeasts throughout the range. For the Lantignié, grapes are harvested by hand, kept as whole clusters, and undergo carbonic maceration for approximately 7 to 15 days in stainless steel. Aging takes place in stainless steel and concrete tanks. The wine is filtered with kieselgur but not fined, and bottled with very low levels of added sulfur dioxide.
