After 12 months in barriques, it is bottled before fermentation completes, allowing the second fermentation to finish in bottle via méthode ancestrale — with no added yeast, no added sugar, no fining, and no filtration. Zero SO2 added.\u003c\/p\u003e\u003cp\u003eBecause the méthode ancestrale process does not conform to Vouvray AOC sparkling wine regulations, this wine is classified as Vin de France. It is the natural and lower-intervention label of Fabien Brutout and Mathieu Cosme, whose family domaine (Domaine de Beaumont) is one of the estates revitalizing Vouvray's sparkling wine category.\u003c\/p\u003e\u003cp\u003eExpect a pale straw color with lively fine bubbles, a fragrant nose of apple, pear, citrus, and yellow flowers, and a mineral, wet-stone undercurrent that reflects the tuffeau and clay-limestone subsoils.
