The soils are a mix of 60% clay and 40% Triassic limestone, an ancient geological formation rich in magnesia, calcium carbonate, and iron that was carried to the surface during the formation of the Dentelles. Grapes are hand-harvested, destemmed, and macerated in stainless steel for 15 days.
