In 2005 Ernesto Cattel began working there as a farmer-winemaker, and in 2006 he and Mauro Lorenzon launched the Costadila project to marry traditional hill farming with organic practice.\u003c\/p\u003e\u003cp\u003eCattel became a pioneer of the col fondo revival, bottling his first one in 2009. He embodied the project's philosophy completely. No sulfur is added at any stage of vinification. Flavors lean toward citrus, stone fruit, and white blossom, with a notable yeasty, umami undertone from the lees and a texture that is richer than conventional Prosecco.
