The vineyard's marine sedimentary soils over siltstone bedrock, combined with afternoon Pacific winds funneling through the Coast Range gap at speeds 40–50% stronger than the broader Willamette Valley, produce fruit with firm natural acidity and thicker skins.\u003c\/p\u003e\u003cp\u003eThe wine is fermented and aged in Oregon-made terracotta amphora produced by Andrew Beckham's Novum Ceramics in the Chehalem Mountains. Fermentation begins spontaneously with native yeast and is arrested before completion, then bottled under crown cap to complete its secondary fermentation in the bottle — the méthode ancestrale. The wine is not disgorged, not fined, not filtered, and contains no added sulfites.\u003c\/p\u003e\u003cp\u003eIn the glass it pours with a slight haze and fine, persistent bubbles typical of an undisgorged pet nat.
