The Brut Réserve is a blend of Bouzy wines made from 80% Pinot Noir and 20% Chardonnay.   Grapes are hand-harvested and whole-bunch pressed in small presses using only the heart of the pressings, with each plot vinified separately and fermented in stainless steel with no malolactic conversion.
