The vineyards are located in Kitzingen and Volkach, within the Franconia region of Germany, and \u003c\/span\u003e\u003cspan data-preserver-spaces=\"true\"\u003eare\u003c\/span\u003e\u003cspan data-preserver-spaces=\"true\"\u003e \u003c\/span\u003e\u003cspan data-preserver-spaces=\"true\"\u003echaracterized\u003c\/span\u003e\u003cspan data-preserver-spaces=\"true\"\u003e by limestone soils that impart minerality to the wines. The grapes are hand-harvested, foot-trodden, and pressed shortly after. Fermentation and aging occur partly in large oak barrels and stainless steel tanks. The wine remains on the lees until the following summer, enhancing its complexity and mouthfeel. A splash of Riesling is added before bottling to introduce additional aromatic freshness.
